Description:

Polylysine is a homopolymer of L-lysine, as a natural, toxicologically safe, antibacterial food preservative. It is a natural substance from microbial metabolism. Compared to traditional preservatives, E-polylysine shows the advantages on safety, good heat tolerance and solubility in water, and extensive antimicrobial ability against Gram+ bacteria and fungi. It can be sterilized along with the raw material, especially as the safe food preservative without side-effects.

Physical properties:

ε-Polylysine is slightly bitter, hygroscopic, light yellow powder.

It is soluble in water, slightly soluble in ethanol, insoluble in organic solvent such as ethyl acetate, ether, ect... 
The molecular of E-Polylysine is a straight chain polymer of L-lysine. 
Its activity is not affected by pH, and stable when heated (120C for 20 min).

It is soluble in water, slightly soluble in ethanol, insoluble in organic solvent such as ethyl acetate, ether, ect.. It can decompose for lysine within the body, and can be completely digested absorption by the body.

Safety:

In 1989, Japan added ε-Polylysine to its national annexing agent catalogue listing as natural additive for foodstuff and allow its use. Following Closely, Korea allowed its use as food additive. In US and Europe, the frequently-used preservatives sorbic acid, and in July, 2003, ε-Polylysine was officially recognized as safe as food preservative by FDA with GRAS Notice No1 GRN0001351.

Applications of ε-PL

 1.  Application in Food

ε-PL can be used in meat, poultry, marine products, bread, biscuits and any other kinds of food. ε-PL can mix with other additives like aminoacetic acid, vinegar, ethanol, vitamine, glycine, Twelve amino Acid thiamine, etc, which greatly improves the preservative ability.  

2. Application in Cosmetics

3. Application in Daily Health Products 

Most Daily Health Products,like toothpaste, gargle, soap, hand washing, Moist Wipes as well as cleaner & disinfectant fluid used in kitchen, have sterilizing and bacteriostatic effect.  It is currently reported by mass data that ε-PL has prominent effect in treating the infection of Helicobacter pylori in oral cavity.

4.Application in medical gargle

ε-PL has bacteriostatic effect on the common Escherichia coli, staphylococcus aureus, pseudomonas aeruginosa, bacillus subtilis, Saccharomyces cerevisiae and mould, etc. 

5.ε-PL can be used as washing and sterilizing agent in food machinery and container for food processing enterprises.

Usage: 
E-Polylysine was generally recognized as safe as food preservative by FDA in October, 2003. 
It is widely used as food preservation in rice, noodles, cakes, snacks, and ice creams, salad, canned foods and meat products.It can be automatically hysrolized into nutritive amino acid, lysine without any harm to the body. It can also be used as a carrier for pharmaceutical molecules. With good absorption of liquid, it is used in SAP to produce sanitation products, such as sanitation napkin and diapers.

You may confect the 5-10%ε-Polylysine solution with cold boiled water or distilled water, then put it into the food and mix fully. If it is used together with other food preservatives, can attain better effect.
