Sialic acids refer to a family of neuraminic acids which contain nine-carbon acidic amino monosaccharides. The most important member of the sialic acid is N-Acetylneuraminic acid (NeuAc or NANA), occurring most abundantly in glycoproteins and glycolipids. Among all types of sialic acids, only N-Acetylneuraminic acid can be found in human tissues. Therefore, sialic acid, to human beings, refer to NANA. SA manufacture will be carried out using biocatalytic process. The micro-organism cells catalyse two substrates N-acetylglucosamine and pyruvate to biosynthesize SA in a water solution,which is subsequently concentrated and crystalysed. SA will be recrystalised as the refinery process.
